My Winter Broccoli Almond Soup

Winters in Delhi can be such a thing that there's even a popular song called #DilliKiSardi solely dedicated to it; beautiful but frickin cold. And, if you are someone like me, who is perpetually freezing into a popsicle, this warm and hearty soup is just for you.
Often times soups can feel boring or something that is only for the sick! Here's my effort to break that myth with this delicious recipe that is full of proteins, vital nutrients and can be a complete meal in itself.

Ingredients
Broccoli : a whole head, roughly chopped
Almonds : 15-18, soaked and peeled
Onion : 1, sliced
Garlic : 2-3 cloves
Vegetable Stock/ Bone Broth/ Water : 2 cups
Butter/ Olive Oil : 1 tbsp
White pepper powder : to taste
Black pepper powder : to taste
Himalayan Pink Salt : to taste
Pumpkin seeds : to garnish
Did you know that Broccoli has various bioactive compounds that reduce inflammation, cell damage and even prevents against certain type of cancers.
Recipe
Slightly warm a non-stick saucepan and add your butter/ olive oil to it.
While the butter is melting add in garlic cloves and sliced onion, sweat them a bit.
Now add almonds and toast them till lightly brown.
Throw in your broccoli and sauté a while, then add a cup of stock/ broth/ water.
Add some salt and white pepper powder, cover and let it simmer for 15-20min.
Once cooled down, blend the cooked broccoli and almonds into a smooth paste.
Add this back to a saucepan and adjust the consistency with stock/ broth/ water.
Cook for 5 minutes, season with freshly crushed black pepper and salt.
Garnish with pumpkin seeds or different seeds if you didn't already have them for breakfast.
